chocolate brownies cupcake...



it was a hectic weekend for me...so i only managed to bake this simple recipe for my family and it was very much enjoyed by Jihan and my hubby....it has the taste of gooey brownies but made into a cupcake presentation...don't judge by its look...taste it first then you know how wonderful the taste is... Eating Pie



1 cup flour

pinch of baking soda

3 1/2 cup cocoa powder

225g cooking chocolate

85g butter

3 eggs

1 cup castor sugar

1 cup walnut pieces, coarsely chopped (i omitted)


  • preheat oven 180 degrees, line muffin pan with baking cups

  • sift together the flour, cocoa and baking soda

  • melt together chocolate and butter over gentle heat, stirring occasionally. remove from heat

  • beat together eggs and sugar. add the flour mixture, then stir in the melted chocolate and the walnuts

  • fill each baking cups and bake for 30 min until a crust ahs formed but cupcakes are still slightly moist in the centre

brownies


i tried out this recipe from mamafami's fotopages....i made it to bring ouver to my cousin's house for a kenduri....it turned out very moist and nice with its delicious chocolate topping...


Ingredients A:
1 cup evaporated milk (I used fresh milk)
1 cup melted butter
1 cup hot water
2 cups brown sugar


Ingredients B [mix well] :
2 eggs (Grade B)
1 teaspoon vanilla


Ingredients C [to be sifted] :
2 cups flour
1 cup cocoa powder
1 teaspoon baking powder
1 teaspoon bicarbonate soda


Method :

1. Pre-heat oven at 175'C for 10 minutes.

2. Mix well all the ingredients A.

3. Pour in ingredients B and stir.

4. Add in ingredients C and stir to mix.

5. Layer a 10 x 10 inch tin with grease proof paper and pour the mixture into the prepared tin.
6. Bake for 40 - 45 minutes.

7. When cooled, pour the topping on top. Let it set slightly before cutting to small pieces.


CHOCOLATE TOPPING

250g cooking chocolate

1 tablespoon butter or margarine

1 teaspoon evaporated milk (I used fresh milk)


Method :

1. Melt cooking chocholate using double boil method.

2. Add butter and mix well.

3. Pour in the milk and stir. Ready to use.

orange mocha brownies




i made this delicious, yummy brownies for a family gathering in PD, topped with chocolate ganache....i tried the recipe from Kak Rinn's fotopages...it tastes very, very good indeed...a perfect combination of chocolate with orange....tastes like the Zip chocolate wafer....


Ingredients:

1 1/2 cups plain flour, sifted

2/3 cups cocoa powder

1 tblspn coffee powder

1 1/2 cups caster sugar

250gm butter, thawed

4 eggs, lightly beaten

1 tblspn vanilla essence

1 orange, juiced abt 1/2 cup and rind grated

1 cup of dark & milk chocolate chips mix (i used choc chips)


Method:

1. In a bowl mix all ingredients except orange juice, orange rind and choc chips. Beat using mixer at med speed until well combined.

2. Chuck in orange juice and rind. Mix again.

3. Stir in choco chips.

4. Pour into baking tray, pre-lined with baking paper overhanging from both sides.

5. Bake for about 25mins @ 170 deg cel.

6. Take out from oven, leave in tin for 5 mins and take out to cool on wire rack.

7. Pour and scrape choc frosting evenly on surface. Cut into squares.


Frosting:

200gm dark choc bar

1/4 cup whip cream

1 tblspn coffee powder


* Combine all in a casserole and microwave for 1 min on HIGH. Take out and stir well until you get a lovely choc frosting. Or just double-boil over medium heat

chunky cheesecake brownies




took this recipe from allrecipes.com....tastes lovely....i just made it into 2 layers, somehow my chocolate batter was not enough....??? still it turned out very good...


1 (8 ounce) package cream cheese, softened
1/4 cup white sugar
1 egg
1 cup semisweet chocolate chips
1/4 cup butter
1 cup semisweet chocolate chips
1/2 cup white sugar
2 eggs
2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt



Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch square baking pan.


Combine cream cheese with 1/4 cup sugar and 1 egg in a mixing bowl; beat until smooth. Stir 1 cup chocolate chips into the cream cheese mixture. Set aside.


Fill a saucepan with water and bring to a boil. Turn the heat off, and set a heatproof mixing bowl over the water. In the mixing bowl, combine butter with the remaining cup of chocolate chips; stir until just melted and blended together.


Stir in the remaining 1/2 cup sugar and 2 eggs, then sift together flour, baking powder, and salt; stir into chocolate until evenly blended.


Pour half of the batter into the prepared baking pan. Spread the cream cheese mixture over the chocolate layer. Top with remaining chocolate mixture (this doesn't need to completely cover the cream cheese layer). Using a knife, swirl the top chocolate layer into the cream cheese to make a marble pattern.


Bake in preheated oven at 350 degrees F (175 degrees C) for 25 to 30 minutes, or until top is crinkled and edges pull away from sides of the pan. Cool thoroughly. Cut into 12 to 16 squares.


Store in the refrigerator or freeze.

ultimate chocolate brownies



from Periplus Mini cookbooks...this is absolutely lovely and delicious...lovelier when served with vanilla ice cream..yummy..!!!


1/3 cup flour

1/2 cup cocoa powder

2 cups sugar

1 cup chopped pecans or pistachio (i used almonds and walnuts)

250g dark cooking chocolate

2 tsp vanilla essence

4 eggs, lightly beaten



  • preheat oven 180 degrees. brush a 8x 12 inch cake tin with melted butter or oil. line the base with baking paper, extending over 2 long sides

  • sift flour and cocoa powder in a large bowl and combine with sugar and nuts. make a well in the centre

  • chop chocolate into small pieces. add chocolate pieces to the dry ingredients

  • melt butter in a small pan over low heat. add it to dry ingredients with vanilla and eggs. stir until ingredients are well combined

  • pour the mixture into prepared tin, smooth the surface and bake for 40-45 minutes.

  • set aside for 2 hours before cutting

  • serve with vanilla ice cream

my 100th posts!! - Fudge brownies


baked fudge brownies last weekend - taken from Periplus Mini Cookbooks (Brownies, Fudges and Toppings)...very easy to make...


150g butter

200g dark cooking chocolate

3/4 cup castor sugar

3 eggs

1 tsp vanilla essence

1 cup flour, sifted



  • preheat oven 180 degrees. brush a 8 inch square tin with oil or melted butter and line base with baking paper

  • melt butter, chocolate and sugar using double boiler method, stirring occasionally. remove from heat

  • beat in eggs and vanilla. then fold in flour. pour into the baking tin and baked for 35 minutes

  • remove from oven and cool in tin before cutting into squares
