dates and lemon cookies


Jihan helped me to bake this cookies

A:
120g butter
30g castor sugar
1 tsp vanilla essence
1 egg yolk

B:
1 tsp lemon zest
100g dates, seeded and cut into small pieces
30g coconut flakes

C:
50g ground almond
150g flour

egg yolk for brushing the top
  • mix well A
  • add in B and C and mix well until becomes a dough
  • roll flat and cut into desired shape
  • brush some egg yolk on top
  • bake in preheated oven 160 degrees for 10-15 min


almond coffee cookies


nestum-based cookies...the tinge of coffee makes it so addicted...!

1 cup sifted self-raising flour
1 1/2 cup nestum
1 1/2 cup ground almond
200g butter
150g caster sugar
1 egg
2 tbsp nescafe mixed with 2 tbsp hot water
100 1000's for decoration

  • sift flour, stir in nestum and almond. set aside
  • cream butter and sugar. add egg and nescafe mixture
  • fold in flour
  • shape into small ball and place on lightly greased tray. flatten dough decorate
  • bake in preheated oven 180 degrees celcius for 10-15 min

crispy chocolate chip cookies


my first kuih raya this year...simple, yet crispy and absolutely mouthwatering..

1 cup butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 tsp vanilla extract
2 cups flour
1 cup oatmeal, blended
1 tsp bicarbonate soda
2 tsp hot water
1/2 tsp salt
2 cups chocolate chips
1 cup chopped almond

  • preheat oven to 175 degrees celcius
  • cream butter, white sugar and brown sugar until smooth
  • beat in eggs, one at a time
  • stir in vanilla
  • dissolve bicarbonate soda in hot water
  • add to batter along with salt
  • stir in flour, oatmeal, choc chips and almonds
  • drop a spoonful batter onto ungreased pan
  • bake for 10 min

lacy crisp cookies



from the Australian Women's Weekly cupcakes and cookies book....crispy and chocolaty...


100g dark cooking chocolate, chopped coarsely

80g butter, chopped

1 cup castor sugar

1 egg, lightly beaten

1 cup flour ] sifted

2 tbsp cocoa powder ] sifted

1/4 tsp bicarbonate soda ] sifted

1/4 cup icing sugar



  • melt chocoalte and butter in a small saucepan over low heat. transfer to medium bowl

  • stir in caster sugar, egg, flour cocoa powder and soda. cover, refrigerate about 15 minutes or until mixture is firm enough to handle

  • preheat oven to 180 degrees fan-forced. grease oven trays, line with baking papaer

  • roll level tablespoons of mixture into balls; roll each ball in icing sugar, place on trays 5 cm apart. bake about 15 minutes, cool crisps on trays

extra large chocolate chunk cookies


my sister made this, recipe taken from an Australian recipe book...will upload the recipe later...but this cookies is very nice, soft with some chunks inside...melts in your mouth...

From a recipe book that my sister copied in Australia…we didn’t expect the cookies to become extra large and they coalesced together…but tastes superb and crispy…

175g plain (semisweet) chocolate ** we used normal dark cooking chocolate
115g butter, cut into pieces
2 eggs
½ cup sugar
¼ cup brown sugar
1/3 cup flour
¼ cup cocoa powder
1 tsp baking powder
2 tsp vanilla
pinch of salt

1 cup pecans, chopped

1 cup plain chocolate chips

1/2 cup white chocolate chips

1/2 cup milk chocolate, chopped

** we used assorted chocolate bars with nut, adding all to the same amount stated

Preheat oven to 160 degrees. Grease baking sheets.

Melt plain chocolate and butter in a pan over low heat, stirring frequently. Leave to cool slightly

Using an electric mixer, beat eggs and sugar for 2-3 minutes. Gradually beat in melted chocolate.

Beat in flour, cocoa powder, baking powder, vanilla and salt. Stir in nuts and chocolate pieces

Drop heaped tablespoons of mixture onto the baking sheets 10cm apart aand flatten each to a round about 3 inches diameter

Bake for 8-10 min until tops are shiny and cracked and the edges look crisp.

Remove the baking sheets to a wire rack to cool for 2 min, then remove the cookies to a wire rack to cool completely.

Do not allow these cookies to cool completely on the baking sheet or they will become too crisp and will break when you try to lift them

Date bars


my mum made this during the weekend. taken from the Shape magazine


Date filling:
3 cup chopped dates
1 1/2 cup water


Crumble:
1/2 cup honey
1/2 cup butter
1/4 cup shortening
1 3/4 cup flour
1 tsp salt
1/2 tsp baking soda
1 1/2 cup instant oats



  • place dates and water and stir continuosly on low heat (10-15 minutes) until its consistency becomes paste-like. cool

  • heat oven to 200 degrees. mix honey, butter and shortening.

  • add in flour, salt, baking soda and oats.

  • grease 8x8 inch tin and press in half the mixture

  • spread the filling on the dough

  • lightly press the remaining crumbles onto the filling

  • bake for 25-30 minutes

  • cut into 2x2 inch while it is still warm

crispy chocolate chips cookies


modified from chef wan's recipe


A:
3/4 cup all purpose flour
1 tbsp nescafe
1/2 tsp bicarbonate soda
1/2 tsp salt
* 1 tsp cinnamon powder (optional)


B:
1/2 sup shortening
3/4 cup sugar
1 egg
1/2 cup oats
1 cup cornflakes
3/4 cup chocolate chips


sift A ingredients, set aside
in a bowl, beat shortening, sugar and egg until smooth
fold in flour mixture, mix well
add oats, cornflakes and chocolate chips. mix well
drop dough by rounded tablespoon onto baking pans, allowing room for spreading
bake in preheated oven 180 degrees for 15 minutes


My review:
a must for me almost every Raya....i love the crispiness of this cookies...you can add raisins or nuts as well...

very easy peanut butter cookies


THIS IS MY SISTER'S RECIPE. SHE LOVES EXPERIMENTING BAKING AND COOKING NEW THINGS. SHE IS A GREAT COOK (BUT I'M STILL BETTER THAN HER...HAHAHAHA). SHE INSISTED THAT I PUT THIS RECIPE ON MY BLOG TO SHARE WITH YOU GUYS..I HAVEN'T TRIED IT THOUGH BUT I ALWAYS TRUST MY SISTER'S TASTEBUD.


ORIGINALLY FROM HER EMAIL TO ME (I JUST COPY AND PASTE)


1 cup crunchy peanut butter
3/4 cup sugar
1 egg
1/4 teaspoon baking powder (optional)
(yup that's it!!!)

- mix everything together
- line baking sheet with baking paper or aluminium foil
- drop teaspoons of cookie dough on the sheet -leave about 2-3cm space between each
- flatten the cookie dough down with a fork
- bake in 180 degrees oven, for about 10 minutes *
- remove from oven and leave to cool for a few minutes (they will be soft as you take them out of the oven, but when they cool down *PRONTO* they will be like REAL cookies, in no time at all heheheee)

*if u want them chewy, cook them for a shorter period of time...if you want them crispy, cook them longer...just watch the base of the cookies-don't leave them too long in the oven until burnt (like mine did, but very crispy hehehee)

as raya is coming up....for those people who complain they don't have time to make kuih raya...try this!!!...3 minutes preparation...i guarantee..hehee...and the result is really good too!! but this recipe doesn't make much..you can double or tripple it (then need to buy big bucket of PB laaa!!!)
