pan grilled tilapia with yogurt sauce


another grilled tilapia recipe, my own version of yogurt sauce (to finish up my plain yogurt in the fridge)...easy, healthy and yummy!!!


tilapia fish (i used 3 small tilapias)

a dash of fish sauce

salt

lime juice

1 tbsp curry powder

1 tbsp chilli paste

kaffir leaves, sliced

2 tbsp yogurt


blended:

3 shallots

3 garlic

1 inch ginger

1 lemongrass



  • clean the fish

  • mix all ingredients. adjust to the taste accordingly

  • marinate the fish with the sauce for 1/2 hour or more (i put everything in a ziplock bag)

  • heat a pan. grill the fish, keep basting the sauce onto the fish. let cook



grilled tilapia with Thai sauce


adapted from Mat Gebu's blog....in the original recipe the fish was fried and the sauce was cooked seperately...but mine, in order to make it less oily, i grilled the fish together with the sauce...i marinated it for about 1/2 hour....absolutely delicious!



1 fish (i used 2 small tilapias)

1 lemongrass, lightly pounded

1 inch ginger, lightly pounded

1 inch galangal, lightly pounded

1 bunga kantan, sliced

4 kaffir leaves, sliced

3 shallots, sliced

2 tsbp fish sauce

lime juice

salt

3 red chillies }

2 garlic } pounded together

1/2 tbsp sugar }




  • clean the fish, rub the fish with salt and lime juice. set aside

  • mix everything together in a big bowl

  • marinate the fish with the sauce, the longer the better

  • preheat oven. once ready, grill the fish in the oven until cooked. (i wrapped the marinated fish in the aluminium foil)

simple grilled fish with yogurt (ii)


i ran out of idea what to cook for hubby tonight....so, i'm trying to be creative today and made this...the taste is good and delicious!!! hubby loves them very much! Feed Me


2 tenggiri slices

2 tbsp plain yoghurt

fresh parsley, chopped

fresh rosemary, chopped

1 tomato, seeded and chopped

lime juice from 1 lime

salt and blackpepper



  • rub some salt onto the fish

  • mix yoghurt and fresh herbs in a bowl. sprinkle some blackpepper. marinade the fish with the yoghurt mixture for a few minutes

  • wrap the fish in an aluminium foil.

  • heat a non stick pan. grill the fish on the pan both side equally until cook

  • once cooked, put the chopped tomato on top of the fish and squeeze some lime juice. add more blackpepper if you wish

  • serve

fish steak (malaysian style)



adapted from kak liza's fotopages.... a very easy and simple recipe...and very tasty and healthy too!!!


tenggiri slices
salt
white pepper
tumeric powder
fish sauce


salad leaves
tomato slices
thousand island sauce
teriyaki/blackpepper sauce


  • coat the fish with salt, tumeric powder and white pepper.

  • add a dash of fish sauce. leave a side for a few minutes.

  • heat a non stick pan. grill the fish on both side until cooked.

  • if it's too dry, add a dash of olive/vegetable oil

  • serve with salad leaves and tomato slices and the sauce of your choice

steamed siakap

the good old steamer

a different style of steamed fish...i used siakap fish which is known to have nice and succulent fillet...this time i made it into tomyam-style gravy...absolutely mouth-watering....!!! Feed Me

1 siakap fish (or any other fish)



blended into paste:
2 shallots
1 inch galangal
1 tomato
2 red chillies


sliced/chopped:
2 garlic
1/2 inch ginger
kaffir leaves
coriander leaves
lime juice (from 2 lime)
fish sauce
salt
sugar
tamarind paste
lemongrass
baby carrots

  • rub the fish with tamarind paste. set aside
  • prepare the paste. add in lime juice,fish sauce, salt and sugar into the paste. mix well

  • pour the paste onto the fish in a dish

  • add in the sliced/chopped ingredients, lemongrass and baby carrots
  • steam the fish for 10 minutes or until cooked

lime rosemary salmon


yeah, i got another salmon fillet in the freezer...today i was quite busy, so i didn't have much time to search for recipes to cook the salmon...i got home, take out some rosemary leaves and duh, no lime in the fridge....luckily my mum planned to go to the pasar malam she could get some lime for me.... Smile


Jihan just had that for dinner, and she ate a lot...hubby also ate the salmon quite a lot, leaving me only a small portion of it...tasted very fresh and yummy!!!! Hungry



1 salmon fillet

salt

blackpepper

rosemary leaves

lime juice

fish sauce



  • rub the salt and blackpepper onto the salmon
  • brush some lime juice and fish sauce onto the salmon.
  • stick some rosemary leaves in between the fish
  • leave aside for a few minutes
  • heat a non stick pan. wrap the salmon fish in aluminium foil.
  • put the wrapped salmon onto the pan, turning the salmon equally until cook
  • remove from pan. squeeze some lime before serving

my style salmon teriyaki


i'm cooking healthy food nowadays, especially with less fat and oil...hubby need to be restricted of those elements for at least 6 months before his liver can generate enough bile to digest the fat...i bought nice pink salmon fillet from Tesco and cook this dish...


salmon fillet

teriyaki marinade sauce

blackpepper

chopped basil leaves



  • marinade the salmon fillet with teriyaki sauce. sprinkle the blackpepper and basil leaves

  • leave aside or refrigerate for 1 hour or more

  • grill the salmon on pan or oven- baked

  • serve hot

grilled fish with yogurt


another healthy recipe for hubby (and we enjoyed them as well)..recipe taken from Nutriweb...tasted very nice but a bit hot...i recommend you to reduce the chilli powder if you cannot stand spice hot food...


500 g (5 medium size pcs) tenggiri/merah fish
20 g (2 tsps) chilli powder
5 g (1/2 tsp) turmeric powder
10 g (1 tsp) ground black pepper
10 g (1 tsp) fish curry powder
1/4 cup low fat yogurt
10 g (1 tsp) tomato puree
5 g (1/2) lime
10 g (1 tbsp) vegetable oil
3 g (1 tsp) salt

blended finely
30 g (6 pips) garlic
90 g (1) onion
10 g (1 cm) ginger

Garnishing
2 tsps spring onions, chopped
2 tsps coriander leaves, chopped
1 tomato, sliced finely
1/2 cucumber, sliced finely
2 salad leaves, shredded


Method
Cut diagonal strips on fish, and marinate with salt and lime juice for 1/2 hour.
Mix blended ingredients, yogurt, chilli powder, curry powder, tomato puree, turmeric powder and ground black pepper.
Marinete fish with 2/3 of yogurt mixure for 1 hour.
Grill fish until golden brown on both sides. Baste fish with the remaining yogurt sauce from time to time.
Decorate with garnishing.
Serve with vegetables and naan or rice.

grilled fish in tomyam paste


i adapted this recipe from Kak Rinn's fotopages for hubby's dinner today....the recipe uses readymade tomyam paste/cube, but none is available in my kitchen, so i ended making the paste myself...
the outcome was superbly, mouthwatering and absolutely delicious!!! hubby asked for more rice today as he really enjoyed the fish very much!! Spaz



1 whole fish (i used tilapia fish)

blend:
1 tomato
1 onion
2 red chillies
a little bit of galangal

kaffir leaves
1 lemongrass, pounded lightly
tamarind paste
salt and sugar to taste
coriander leaves for garnishing
1 lime




  • wash and clean the fish, make slits on the body.

  • brush some tamarind paste on the fish, leave aside for a few minutes

  • meanwhile, prepare the blended ingredients

  • coat the fish with blended ingredients, lemongrass and kaffir leaves. add sugar and salt according to taste. marinade for 20 minutes

  • put the fish in a baking dish. bake in oven for 20 minutes

  • garnish with coriander leaves.

  • squeeze lime juice on top of the fish before serving

Ikan parang asam pedas


my mum's recipe...we really love asam pedas...!!! everybody will stay at the dinner table waiting to sip all the gravy last...


1/2kg ikan parang


1 onion ]blend

1 tomato ]blend

3 red chillies ]blend

3 tbsp dried chilli paste


2 tbsp oil

2 stalk lemongrass

daun kesum

3 tbsp tamarind + water

lady fingers

bunga kantan

tomato, wedged

salt and sugar


  • heat oil in pot, add, lemongrass and blended ingredients and chilli paste. fry until fragrant.

  • add in tamarind juice. let boil

  • add in fish and daun kesum, let simmer

  • add in lady fingers and bunga kantan

  • add salt and sugar according to taste

  • remove from heat

tenggiri goreng kicap (fried tenggiri with soy sauce)



i have not been cooking dinner for quite some time ( my maid did) and yesterday i decided to feed my "hungry hippos" with simple dish...

2 slices of tenggiri - marinate with salt and tumeric powder and fry till cooked
1 onion, sliced
2 garlics, sliced
1 red chilli, sliced
1 cinnamon stick
2 star anise
1 tomato, wedged
4 tbsp, sweet soy sauce (kicap manis cap kipas udang)
1 tbsp, salty soy sauce (kicap masin cap kipas udang)
garnishing- spring onion



  • remove excessive oil from frying the fish, leaving about 1 tbsp of oil

  • add in onion, garlic, red chilli, cinnamon stick and star anise, fry till fragrant

  • add in the soy sauce, mix well

  • add in the fried fish and tomato, mix well

  • remove from heat

  • garnish with chopped spring onion

the 3 taste black pomfret (bawal 3 rasa)


modified from Mat Gebu's blog:


1 black pomfret (or any other fish)
1 tsp tumeric powder
1/2 tsp salt
1/2 carrot, sliced
cauliflower florets
baby corns, sliced
celery, sliced
tomatoes, wedged
1/2 tbsp sugar
3 tbsp water


1 onion, sliced
2 cloves garlic, sliced
1 inch ginger, pounded
1 tbsp chilli paste


2 tbsp oyster sauce
2 tbsp tomato ketchup
1 1/2 tbsp chilli sauce
1 tbsp light soy sauce



  • clean the fish and marinate with salt and tumeric powder. fry the fish till golden. set aside

  • remove excessive oil in the pan (leave about 2 tbsp oil). add in the onion, garlic, ginger and chilli paste. fry till fragrant

  • add in all the sauce (except the light soy sauce), mix well.

  • add in the vegetables. cook for 2-3 minutes

  • add in the light soy sauce and sugar

  • add in water, mix well.

  • put in the fish. mix well

  • remove and serve

masak lemak nenas ikan masin (pineapple with salted fish)


my favourite...!! a combination of sweet, hot and salty...


pineapple, sliced then cut into 4 small pieces

salted fish (i used ikan talang masin)

coconut milk

tumeric leaves


Pound:

bird's eye chillies

tumeric


  • put in pounded ingredients and coconut milk into a pot

  • let boil

  • add in salted fish and pineapples

  • add in tumeric leaves

  • let them cook

  • remove from heat

  • serve with hot rice

Steam pomfret


this is a very easy dish..i love steam fish so much and i always topped them with lots of vegetables...a very healthy dish...


1 pomfret (or any fish)
tamarind juice
salt
blackpepper
fish sauce
soy sauce

sliced: garlic, shallots, ginger, chillies

tomatoes
celery sticks
cauliflower
carrots
cabbage
coriander leaves
  • heat steamer
  • put the cleaned fish in a dish/plate
  • put the sliced ingredients in the dish
  • add in tamarind juice
  • sprinkle soy sauce, fish sauce and salt according to your taste
  • put in the vegetables
  • sprinkle blackpepper
  • steam for 15-20 minutes
  • garnish with coriander leaves

sardine curry


this is my husband's recipe...usually when he feels like eating sardine curry, he usually cook this himself...but today, i cooked this dish for him..the taste..? well, not bad laa....


1 can sardine
curry powder (mixed with water)
chopped shallots and garlic
potatoes
carrots
tomatoes
coconut milk/fresh milk
salt

  • heat oil in pan. fry chopped shallots and garlic till fragrant

  • add in curry mixture, fry till fragrant

  • add in carrots and potatoes. let simmer

  • add in coconut milk/fresh milk. let simmer

  • add in sardine and its gravy (according to my husband, the more gravy you put in, the tastier). add in tomatoes and let simmer

  • remove from heat

Baung fish in tempoyak gravy


Ingredients:
1 Baung fish cut into big pieces
2cm tumeric and 10 cili padi pound into paste
2 tbsp tempoyak (fermented durian)
1 stalk lemongrass pound roughly
2 galangal flower (bunga kantan)
few tumeric shoot (daun kunyit)
salt


Method:
Boil fermented durian with the chillic paste in 1/2 liter water
Add the lemongrass
Once boiled, add galangal flower, tumeric shoot and salt according to taste
Add in the fish and boil until cook
Serve with hot rice

My review:
I simply love anything to do with tempoyak!!!! Especially my Mum's cooking...I can just sip the gravy alone until finished...! Yum..Yum..
