chocolate rice orange muffins



moist and lovely....from kak liza's fotopages...


ingredients A

2 cups flour ]

1 tsp baking powder ] sifted twice

1/2 tsp soda bicarbonate ]

1 cup brown sugar

2 tbsp chocolate rice

chocolate chips for sprinkle (optional)


ingredients B

1/2 cup butter melted

1 cup orange juice

1 egg lightly beaten

1 tsp orange emulco



  • preheat oven 180 degrees for 15 min

  • mix all ingredients in A

  • pour in B into A, mix well

  • fill in the muffin cups 3/4 full. sprinkle with extra chocolate chips if you wish

  • bake for 20 min or till done

honey muffins


tried out this recipe from the NST... nice and lovely...
2 cups flour
1/4 cup sugar
2 tsp baking powder
1/2 tsp salt
2 eggs
1/2 cup honey
1/2 cup orange juice
1/3 cup butter, melted
1 tsp vanilla
  • combine flour, sugar, baking powder, baking soda and salt, set aside
  • in a mixing bowl, beat eggs. add honey, orange juice, butter and vanilla. mix well
  • stir into dry ingredients until batter is formed
  • fill muffin cups
  • bake at 180 degrees for 15-20 min

coffee muffin with chocolate chips


tried out this lovely muffin recipe from kak hanieliza...


A:

350 g flour

3 tsp baking powder

1/2 tsp salt

200 g brown sugar


B:

150 ml corn oil

250 ml coffee milk(Dutchlady)

1 tsp nescafe

1 egg, lightly beaten

1tsp vanilla

chocolate chips



  • preheat oven 180 degrees for 15 min

  • sift the flour with baking powder

  • mix all ingredients in A

  • add in B ingredients into A, mix well

  • spoon in the batter into muffin cups

  • sprinkle some chocolate chips on top

  • bake for 20 min

banana chocolate chips muffin


i tried out this recipe from Mamazieza...very moist and lovely....i used chocolate chips instead of chocolate rice....


250 gm butter

190 gm sugar/brown sugar

1 tspfull ovalette 4 eggs - medium

1 tsp vanilla

275 gm flour

1 tsp baking powder

1 tsp bicarbonate soda

250 gm mashed banana

100 gm chocolate rice


Method

Beat the butter and sugar until white and fluffy, then add one egg at a time together with the ovalette.

Then add in the banana.

After it is all mixed nicely, pour in the flour which has been sifted with the raising agent.

Lastly do not forget the chocolate rice... Just mixed it lightly.

Then you bake it (180 degrees for 20 min), cool it and eat it... yummy.. yummy

chocolate chip muffin


tried out this recipe from Mat Gebu.... lovely for afternoon tea....


sifted together:
250g flour
2 tsp baking powder
1/2 tsp bicarb soda
2 tbsp cocoa powder


mix together:
250 ml milk
90ml corn oil/vege oil
1 egg
1 tsp vanilla


175g castor sugar

150g chocolate chips



  • mix the dry ingredients with chocolate chips.

  • add in the wet ingredients to the dry ingredients, mix well

  • fill the muffin cup, sprinkle more chocolate chips on top if you want

  • bake in a preheated oven 180 degrees for 20 min.

chocolate cheese muffin



adapted from kak Jun's blog too...i copied down the receipe wrongly, but managed to improvise and turned out superb as well....


140g chocolate chips

100g cream cheese

80g butter

2 eggs

60g sugar

100g flour

2tsp baking powder



  • preheat oven 180 degrees

  • melt the cream cheese, butter and chocolate chips using double boiler. remove

  • add in eggs, mix using a whisker

  • add in sugar, mix well

  • sift flour and baking powder

  • add in into the cheese mixture. mix well

  • put into baking cups and bake for 20 min

**i did not melt the chocolate chips together with the cream cheese and butter. instead, i put in the chips after mixing the flour into the cheese mixture...and i used chocolate chips and strawberry chips...lovely..


banana crumbs muffin


taken from kak Jun's blog....moist and lovely with delicious crunchy crumbs....i like....!


1 1/2 cup flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

3 medium banana - mashed

3/4 cup sugar

1 egg - lightly beaten

1/3 cup butter - melted


crumbs:

1/3 cup brown sugar

2 tbsp flour

1/8 tsp cinnamon powder

1 tbsp butter



  • mix the flour, baking powder, soda and salt

  • in another bowl, beat the banana, egg, sugar and melted butter

  • pour in the flour into the banana mixture. mix well

  • put into muffin cups

  • for the crumbs, mix everything using fingers and make it into crumbs. top the crumbs onto the batter in the muffin cups

  • bake in preheated oven 180 degrees for 15-20 min

chocolate chips muffin




i adapted the recipe from kak Rinn...it actually uses 3 different coloured chocolate chips but i used almond chocolate bars and chopped them coarsely and put into the batter...tastes as good with it fine texture and chocolaty taste.... Roll


250g butter

200g castor sugar

300g self raising flour

4 eggs

4 tbsp cocoa powder

25g dark cooking chocolate, melted using double boiler

3 tbsp fresh milk

chocolate chips



  • beat butter and sugar till light and fluffy

  • add in eggs one by one, beating well after each addition

  • sift flour with cocoa powder, add into the batter bit by bit

  • add in melted chocolate and milk

  • put in chocolate chips, until just combined

  • put into papercups

  • bake in preheated oven 175 degrees for 15-20 min

strawberry banana muffin




had some leftover's strawberry from Cameron Highlands....turned it into this smashing muffins!!! got the recipe from Joy of Baking....the texture is lovely....a credit to Stephanie Jaworski for this recipe...!!!


1/2 cup unsalted butter, melted
3/4 cup light brown sugar
2 large eggs, lightly beaten
1 teaspoon pure vanilla extract
2 large ripe bananas, mashed (about 1 cup)
1 cup fresh or frozen blueberries or strawberries (cut into small pieces)
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt

Preheat oven to 350 degrees F (177 degrees C). Line the muffin pan with paper liners


In a small saucepan melt the butter. Set aside.

In a medium sized bowl whisk together the brown sugar, eggs, vanilla extract and mashed banana. Add the melted butter to the brown sugar mixture and stir to combine.

In another large bowl combine the flour, baking powder, baking soda, cinnamon, and salt. Gently fold in the berries, making sure they are coated with flour. This helps to prevent the berries from sinking during baking.


Add the wet ingredients to the dry ingredients and stir only until the ingredients are just combined. Do not over mix the batter or tough muffins will result.

Fill each muffin cup about two thirds full of batter, using two spoons or an ice cream scoop.


Place in the oven and bake until a tester inserted in the center of a muffin comes out clean, 20 to 25 minutes. Transfer to a wire rack to cool.

prune and orange muffin




lovely muffin from Home Baking recipe book


1 1/2 cup prunes, chopped

1/4 cup brown sugar

1 cup orange juice

50g butter

2 eggs

2 cup flour

3 tsp baking powder


  • preheat oven 190 degrees. place prunes, brown sugar, orange juice and butter in a saucepan. heat gently until the butter melts. remove from heat and cool

  • beat eggs into prune mixture with a wooden spoon. sift in flour and baking powder and mix until combine

  • spoon the mixture 3/4 full into a greased deep muffin pan

  • bake for 15 min

blueberry muffins




another easy recipe by my sister...moist and fruity...


2 cups flour
1/2 cup sugar
3 tsp baking powder
1/2 tsp salt


3/4 cup milk
1/3 cup vegetable oil
1 egg


blueberry filling/jam * can substitute with other fillings


  • combine flour, sugar, baking powder and salt


  • beat the milk, oil and egg


  • add the wet ingredients to the dry ingredients. mix well (using spoon)


  • spoon into the muffin cup 3/4 full


  • spoon in the jam into the batter


  • bake in a preheated oven 200 degrees for 20-25 minutes


**i mix the blueberry filling into the batter before putting them into the muffin cups



you can also top the muffin with a simple crunchy crumbs:



  • butter


  • sugar


  • flour


mix together until becomes crumbs and top on the muffins before baking them

Oreo muffins

1 3/4 all-purpose flour

1/4 cup sugar

1 tablespoon baking powder

1/3 cup butter or margarine

1 cup milk

1 egg

16 OREO chocolate sandwich cookies, coarsely chopped

50g white chocolate chopped

50g dark chocolate chopped


Mix flour, sugar and baking powder in medium bowl.

Cut in the butter until mixture resembles breadcrumbs.

Blend milk and egg in a small bowl.

Stir into flour mixture.

Gently stir in chopped cookies and chopped white/ dark chocolate.

Spoon batter into greased or paper-lined muffin trays.

Sprinkle with more chopped chocolates.

Bake for 15-20minutes or until toothpick inserted near centres comes out clean.

Cool in pan on wire rack for 5 minutes.

Remove from pan, cool slightly.


Lovely...not so sweet...i love the taste of oreo inside it...i put some chocolate ganache on top...

Tuna cheese muffin


from Mat Gebu's blog:


1 egg

1 1/2 tsp castor sugar

1 tsp baking powder*

120 g flour*(*mix together and sifted)

80 g tuna in oil

50 ml fresh milk

50 g mozarella cheese

1 clove garlic, chopped

pinch of salt


  • whisk the egg, sugar, garlic and salt

  • add in the tuna and mix well

  • add in the flour mixture alternating with milk

  • put in the cheese

  • fill 3/4 the muffin cup with the mixture

  • bake in a preheated oven 180 degrees for 15-20 minutes

** i kind of like the taste (like jemput2 tuna) but the texture is quite flat and not fluffy and it sticks to the paper cups...my suggestion is grease the muffin pan and scoop directly the batter into the muffin fan..
