moist chocolate cupcakes -little monsters





i made this last week and Jihan brought them to her playgroup to give to her friends...she's celebrating her birthday with her friends...the kids really love it!!!

mocha cappuccino cupcakes


these appealing cupcakes duplicate the enticing flavour of cappuccino coffee....for coffee lovers....taken from The Cupcake Book..


1 3/4 cup flour

2 tbps cocoa powder

2 tbsp nescafe powder

85g butter

1/3 cup castor sugar

1 tbsp honey

3/4 cup water

1 tsp baking soda

3 tbsp milk

1 egg



  • preheat oven to 180 degrees. line muffin pan with baking cups

  • sift together flour and cocoa powder

  • put the coffe, butter, sugar, honey and water together in a saucepan. heat gently, stirring constantly to dissolve sugar. bring to boil then reduce the heat and simmer for 5 min. transfer to a bowl and let cool

  • in a nother bowl, dissolve the baking soda in the milk

  • when cool, stir in the flour mixture, the soda mixture and the egg, beat until smooth

  • fill each baking cup and bake for 25 min

** i mix the batter with 1 cup of chocolate chips, making it more mocha!

chocolate brownies cupcake...



it was a hectic weekend for me...so i only managed to bake this simple recipe for my family and it was very much enjoyed by Jihan and my hubby....it has the taste of gooey brownies but made into a cupcake presentation...don't judge by its look...taste it first then you know how wonderful the taste is... Eating Pie



1 cup flour

pinch of baking soda

3 1/2 cup cocoa powder

225g cooking chocolate

85g butter

3 eggs

1 cup castor sugar

1 cup walnut pieces, coarsely chopped (i omitted)


  • preheat oven 180 degrees, line muffin pan with baking cups

  • sift together the flour, cocoa and baking soda

  • melt together chocolate and butter over gentle heat, stirring occasionally. remove from heat

  • beat together eggs and sugar. add the flour mixture, then stir in the melted chocolate and the walnuts

  • fill each baking cups and bake for 30 min until a crust ahs formed but cupcakes are still slightly moist in the centre

Devils cupcake



i was really into chocolates during the long CNY break...so, i tried out this recipe from kak Jun and i simply fall in love with the very chocolaty, moisty, cakey......in fact, everybody loves them so much...i didn't put any topping because (i was lazy) and it tasted best without one...



2 cup flour

2 cup sugar

1/2 cup cocoa powder

1 1/2 tsp soda bicarbonate

1 1/2 cup milk (i used fresh milk)

1/2 cup butter

2 tsp vanilla essence

2 eggs



mix everything (EXCEPT THE EGGS) in the mixer with low speed until all mixed well.

then mix on high speed for 2 min

add in eggs and continue mixing on high speed for 2 min

put batter in paper cup

bake for 15-20 minutes in a preheated oven 170 degrees

let cool

black bottom cheese cupcakes








it has been a while since i put the last entry for this blog..the reason being, my streamyx connection is currently severed at home...not sure why....i'm doing this at my clinic...

i made this lovely cupcakes during the CNY break...tried out the recipe from Joy of Baking...i should say that this cupcakes are lovely and lovely and lovely...you'll be speechless when it enters your mouth...


and my Jihan simply can't wait to have the cake after her nap and loves the cheese part only...




Cream Cheese Filling:
8 ounces (227 grams) cream cheese, room temperature
1/3 cup (65 grams) granulated white sugar
1 large egg
1/2 teaspoon pure vanilla extract



Chocolate Cupcakes:
1 1/2 cups (210 grams) all purpose flour
1 cup (210 grams) light brown sugar
1/3 cup (30 grams) natural unsweetened cocoa powder


1 teaspoon baking soda
1/4 teaspoon salt
1 cup (240 ml) water
1/3 cup (80 ml) unflavored vegetable oil (I use sunflower)
1 tablespoon white vinegar (i used lime juice)
1 teaspoon pure vanilla extract




Preheat oven to 350 degrees F (177 degrees C)

Cream Cheese Filling: In your food processor or electric mixer beat the cream cheese until smooth. Add the sugar, egg, and vanilla extract and beat until creamy and smooth. Set aside while you make the Chocolate Cupcake batter.

Chocolate Cupcakes: First, in a large bowl sift together the flour, sugar, cocoa powder, baking soda, and salt. In a separate bowl mix the water, oil, vinegar, and vanilla extract. Make a well in the center of the dry ingredients and stir in the wet ingredients until nice and smooth. Evenly divide the batter among the muffin cups. Then spoon a few tablespoons of the cream cheese filling into the center of each cupcake.

Bake in the preheated oven for about 25 minutes, or until the cream cheese filling is a little brown and the cupcakes feel springy to the touch (a toothpick inserted into the chocolate part of the cupcake will come out clean). Remove from oven and place on a wire rack to cool.

chocolate apple cakes



adapted from Essential Cooking Series- Home Baking book..moist and lovely...


150g butter

3/4 cup sugar

3 eggs

2 cup flour

1/4 cup cocoa

3 tsp baking powder

1 apple, sliced

icing sugar to dust



  • preheat oven 180 degrees.

  • melt butter in a large saucepan. remove from heat and mix in sugar and eggs until combined

  • sift flour, cocoa and baking powder into mixture. beat with a wooden spoon until smooth

  • half fill the muffin cup with mixture. top with apple slices then with chocolate mixture to fill the cases

  • bake for 15-20 minutes or until firm. let cool

  • dust with icing sugar

moist chocolate cupcakes




i really like this chocolate cake because it is very moist and chocolaty...


250 g butter
2 cups castor sugar
2 3/4 cups flour
4 eggs
1 teaspoon bicarbonate soda
1 teaspoon vanilla essence
1 cup cocoa powder
1 1/2 cup water


1. Mix cocoa powder with water and set aside.
2. Sift flour and bicarbonate of soda 3 times and set aside.
3. Cream butter and sugar.
4. Beat egg till fluffy.
5. Pour the eggs into the creamed mixture a bit at a time.
6. Add in vanilla essence.
7. Fold in the sifted dry ingredients into the mixture.
8. Pour in the cocoa mixture and keep folding.
9. Fill in the muffin cups 3/4 full
10. Bake for 15-20 minutes or until done

chocolate walnut cupcakes

i used the leftover of chocolate ganache to make this..lovely, soft and creamy....


85g dark cooking chocolate (i used my leftover chocolate ganache)

75g self-raising flour

1/4 tsp bicarbonate soda

65g butter

75g castor sugar, divided into 2 portions

3 eggs, seperated

1 tbsp milk at room temperature

50g chopped walnuts


  • line muffin pan with paper cups

  • melt chocolate in suacepan over simmering water. set aside to cool

  • sift self-raising flour and bicarbonate soda

  • cream butter and 1 portion of sugar until light and fluffy

  • beat in egg yolks one at a time followed by cooled melted chocolate

  • fold in sifted ingredients

  • in a seperate bowl, whisk egg whites till soft peaks form. beat in the remaining sugar until mixture just stiff

  • using spatula, fold in egg whites mixture into flour mixture

  • add in chopped walnuts

  • spoon into paper cups

  • bake in a preheated oven 160 degrees for 20-25 minutes

i didn't put any icing on top because it's just so nice on its own (plus i was a little bit lazy that night)

vanilla cupcakes with cream cheese topping (cupcakes telur dinasour)



this is a martha stewart's recipe (cupcakes). i made this for the open house...topped with cream cheese topping and almond M&M on top...the taste, is absolutely superb...pop everything into your mouth and you can feel every single taste at once...my cousins called them as cupcakes telur dinasour as they look like one...


1 1/2 cup all purpose flour
1 tsp baking powder
1/2 tsp salt
2 cup butter
1 cup sugar
3 eggs
1 1/2 tsp vanilla essence
3/4 cup milk


  • sift the flour, baking powder and salt

  • beat butter and sugar till fluffy

  • add in eggs one by one

  • add in sifted ingredients, alternating with milk. add in vanilla essence

  • put into the muffin cup 3/4 full

  • bake in a preheated oven 160 degrees for 20 minutes

vanilla strawberry cupcakes

1 1/2 cup self raising flour
1 1/4 cup all purpose flour
1 cup butter at room temperature
2 cups sugar
4 eggs
1 cup fresh milk
1 tsp vanilla essence
*strawberry jam


mix and sift the flour
cream butter till soft. add sugar and continue mixing
add eggs one by one and mix
add in dry ingredients alternate with milk and vanilla
put in baking cups
put in some strawberry jam
bake for 20 minutes in a preheated oven 150 degrees
My review:
I modified the recipe a bit by putting the strawberry jam...Lovely and lovely and lovely....so moist and a right combination with the strawberry jam...!!!

my 1st mass production of cupcakes











this is my first mass productions of cupcakes, in conjunction with a family gathering held at our lovely home in Bukit Mahkota yesterday...

i prepared about 70+ pieces of chocolate moist cupcakes and about 60+ of vanilla custard cupcakes and decorated them with a few designs...

the outcome was good and i got a few compliments from the guests (thank you, thank you) ...
