i used the leftover of chocolate ganache to make this..lovely, soft and creamy....
85g dark cooking chocolate (i used my leftover chocolate ganache)
75g self-raising flour
1/4 tsp bicarbonate soda
65g butter
75g castor sugar, divided into 2 portions
3 eggs, seperated
1 tbsp milk at room temperature
50g chopped walnuts
- line muffin pan with paper cups
- melt chocolate in suacepan over simmering water. set aside to cool
- sift self-raising flour and bicarbonate soda
- cream butter and 1 portion of sugar until light and fluffy
- beat in egg yolks one at a time followed by cooled melted chocolate
- fold in sifted ingredients
- in a seperate bowl, whisk egg whites till soft peaks form. beat in the remaining sugar until mixture just stiff
- using spatula, fold in egg whites mixture into flour mixture
- add in chopped walnuts
- spoon into paper cups
- bake in a preheated oven 160 degrees for 20-25 minutes
i didn't put any icing on top because it's just so nice on its own (plus i was a little bit lazy that night)
