fruit tartlets




sweet pastry:
200g butter
100g castor sugar
1 egg
400g flour (sifted)
10g powdered milk (sifted)


Whisk the butter and sugar.
Add in egg and continue whisking.
Add in sifted flour and powdered milk. Make it into dough
Keep the dough in a plastic bag and keep in the fridge for 30 minutes
Then mould the dough to make the pastry
Bake for 20 minutes in a preheated oven at 150 degrees


Custard Cream
100g instant custard
200g cold water
100g non dairy topping cream

Whisk all ingredients until curdled


Let the pastry cold. Brush melted chocolate on the crust (optional). Pipe the custard cream. Put the fruits on top of the cream.

bread and butter pudding


i made this in 2 casserole dishes for my potluck party. i left i small dish for my family to enjoy them. i forgot to take the photos earlier. so when i came back, only a small portion was left. this is a very easy to prepare and absolutely delicious.


ingredients:

1 loaf of bread (i used to keep the leftover crusts inside the fridge and use them to make this recipe)

1 can evaporated milk/fresh millk

1/2 can water

1/2 cup butter

2 eggs

3/4 sugar (i sometimes use brown sugar)

1/2 cup raisin


method:


  • soak the bread in the milk and water

  • cream butter and sugar

  • add in eggs. continue beating

  • mix together the bread with the butter mixture

  • sprinkle on top with raisins

  • bake in a preheated oven at 160 degrees for 30 minutes or until done

a healthy jemput-jemput (Fritters)

ANOTHER RECIPE FROM MY SISTER....(AGAIN CUT AND PASTE FROM HER ORIGINAL EMAIL)

"Jemput-jemput with a modern touch"

-a few cauliflower florets, chopped finely
-carrots, julienned (cut into thin sticks)
-ikan bilis-udang geragau
-brown onions, chopped
-plain flour
-water
-pinch of salt (not really necessary - ikan bilis n udang geragau already salty)

So basically just mix all the ingredients except flour and water, then only add the flour and water bit by bit until the mix comes to a thick jemput2 consistency..personally i add just enough flour and water to combine the other ingredients, but that depends on ur preferences..if you like the jemput2 to be more "battery"..then add more flour n water..

then just fry like normal jemput2...i just shallow fry them..saves oil..hehee..and the jemput2 turns out thin and crispy..

then cicah with sweet cili sauce..nice..


this is one of those things that i simply whip up together with wuteva ingredients i can find at home..instead of just the usual jemput2 that contains mostly the batter..with this jemput2 you can at least "sneak" in some veges and your kids won't even noticed. the carrot actually adds crispiness to the jemput2,especially the ones that are sticking out of the batter. the cauliflower also cooks really well, and you can't really taste them ehehheheee...other veges that might be good to add into the jemput2 are spring onions, kucai, i can't think of anymore rite now..basically wuteva u have stored in your fridge lah!!

so...in a way its a healthier jemput2...try it.

very easy peanut butter cookies


THIS IS MY SISTER'S RECIPE. SHE LOVES EXPERIMENTING BAKING AND COOKING NEW THINGS. SHE IS A GREAT COOK (BUT I'M STILL BETTER THAN HER...HAHAHAHA). SHE INSISTED THAT I PUT THIS RECIPE ON MY BLOG TO SHARE WITH YOU GUYS..I HAVEN'T TRIED IT THOUGH BUT I ALWAYS TRUST MY SISTER'S TASTEBUD.


ORIGINALLY FROM HER EMAIL TO ME (I JUST COPY AND PASTE)


1 cup crunchy peanut butter
3/4 cup sugar
1 egg
1/4 teaspoon baking powder (optional)
(yup that's it!!!)

- mix everything together
- line baking sheet with baking paper or aluminium foil
- drop teaspoons of cookie dough on the sheet -leave about 2-3cm space between each
- flatten the cookie dough down with a fork
- bake in 180 degrees oven, for about 10 minutes *
- remove from oven and leave to cool for a few minutes (they will be soft as you take them out of the oven, but when they cool down *PRONTO* they will be like REAL cookies, in no time at all heheheee)

*if u want them chewy, cook them for a shorter period of time...if you want them crispy, cook them longer...just watch the base of the cookies-don't leave them too long in the oven until burnt (like mine did, but very crispy hehehee)

as raya is coming up....for those people who complain they don't have time to make kuih raya...try this!!!...3 minutes preparation...i guarantee..hehee...and the result is really good too!! but this recipe doesn't make much..you can double or tripple it (then need to buy big bucket of PB laaa!!!)

my spaghetti bolognese

my hubby really loves spaghetti bolognese...everywhere he goes, he will surely order this as his main dish...and my little Jihan also loves any pasta...i love making spaghetti bolognese instead of buying the instant one...my recipe is very simple..


ingredients:
500g mince meat/chicken
2 shallots (chopped)
3 garlics (chopped)
1 onion (chopped)
4 tbsp olive oil
1 packet spaghetti
5 tbsp tomato puree
5 whole tomatoes or 1 can of canned tomatoes
1/2 tin button mushrooms (chopped)
1/2 carrot sticks (chopped)
fresh parsley or mixed herbs
1-2 cups of water
salt
grated parmesan cheese


method:

  • boil the spaghetti in 1 litre of water (add a little bit of olive oil and salt) until done and drain

  • heat olive oil in a pan. add the chopped onion, shallots and garlic. fry until fragrant

  • add in the mince meat. fry until half cooked

  • add in the tomato puree

  • add in the tomatoes, mushrooms and carrots

  • add in water according to the consistency you like for the gravy

  • add in fresh parsley or mixed herbs

  • lastly, add salt according to your taste

  • serve with the spaghetti with grated parmesan cheese on top



my 1st mass production of cupcakes











this is my first mass productions of cupcakes, in conjunction with a family gathering held at our lovely home in Bukit Mahkota yesterday...

i prepared about 70+ pieces of chocolate moist cupcakes and about 60+ of vanilla custard cupcakes and decorated them with a few designs...

the outcome was good and i got a few compliments from the guests (thank you, thank you) ...

Moist Chocolate Cake




Ingredients :

250 g butter

2 cups castor sugar

2 3/4 cups flour

4 eggs

1 teaspoon bicarbonate soda

1 teaspoon vanilla essence

1 cup cocoa powder

1 1/2 cup water


Method :

1. Mix cocoa powder with water and set aside.

2. Sift flour and bicarbonate of soda 3 times and set aside.

3. Cream butter and sugar.

4. Beat egg till fluffy.

5. Pour the eggs into the creamed mixture a bit at a time.

6. Add in vanilla essence.

7. Fold in the sifted dry ingredients into the mixture.

8. Pour in the cocoa mixture and keep folding.

9. Bake for 1 hour 15 minutes or till done


My Review:

I found this recipe on one of the website (but i forgot the web address...so sorry to the owner...). This is one of the very moist chocolate cake....I really like the consistency and the chocolate taste...
P/S: This was the cake i baked when my l"ittle helper" broke a bottle of blue food colouring

Baung fish in tempoyak gravy


Ingredients:
1 Baung fish cut into big pieces
2cm tumeric and 10 cili padi pound into paste
2 tbsp tempoyak (fermented durian)
1 stalk lemongrass pound roughly
2 galangal flower (bunga kantan)
few tumeric shoot (daun kunyit)
salt


Method:
Boil fermented durian with the chillic paste in 1/2 liter water
Add the lemongrass
Once boiled, add galangal flower, tumeric shoot and salt according to taste
Add in the fish and boil until cook
Serve with hot rice

My review:
I simply love anything to do with tempoyak!!!! Especially my Mum's cooking...I can just sip the gravy alone until finished...! Yum..Yum..

I tried this recipe posted at drNo's blog...moist and lovely...strongly recommended...!


Custard Cupcakes

1 cup butter

1 cup sugar

4 eggs
1 tsp vanilla essence


Sift together:
1 cup all purpose flour
1 cup custard powder
1 tsp baking powder
1 tsp soda bicarbonate


Method:

-beat butter and sugar until fluffy

-beat in eggs one by one.

-add dry ingredients that have been sifted together

-mix in vanilla essence

-scoop into prepared muffin tin

-bake 20-25minutes in a preheated oven 175 degrees C.

Lemongrass Chicken


Ingredients:

1 whole chicken cut into pieces about 2x2 inches

6 stalks lemongrass crushed

tumeric powder and salt

oil to fry

blend: 6 shallots, 1 onion, 4 garlic, 20 dried chilli (seeded and boiled)


Method:


  • Marinade the chicken in tumeric powder and salt. Fry for 2-3 minutes and remove

  • Fry the blended ingredients until fragrant

  • Add in the lemongrass

  • Add in the fried chicken slices and fry until the lemongrass becomes dry

  • Serve with hot rice
