adapted from Mat Gebu's blog....in the original recipe the fish was fried and the sauce was cooked seperately...but mine, in order to make it less oily, i grilled the fish together with the sauce...i marinated it for about 1/2 hour....absolutely delicious!
1 fish (i used 2 small tilapias)
1 lemongrass, lightly pounded
1 inch ginger, lightly pounded
1 inch galangal, lightly pounded
1 bunga kantan, sliced
4 kaffir leaves, sliced
3 shallots, sliced
2 tsbp fish sauce
lime juice
salt
3 red chillies }
2 garlic } pounded together
1/2 tbsp sugar }
- clean the fish, rub the fish with salt and lime juice. set aside
- mix everything together in a big bowl
- marinate the fish with the sauce, the longer the better
- preheat oven. once ready, grill the fish in the oven until cooked. (i wrapped the marinated fish in the aluminium foil)
