grilled fish in tomyam paste


i adapted this recipe from Kak Rinn's fotopages for hubby's dinner today....the recipe uses readymade tomyam paste/cube, but none is available in my kitchen, so i ended making the paste myself...
the outcome was superbly, mouthwatering and absolutely delicious!!! hubby asked for more rice today as he really enjoyed the fish very much!! Spaz



1 whole fish (i used tilapia fish)

blend:
1 tomato
1 onion
2 red chillies
a little bit of galangal

kaffir leaves
1 lemongrass, pounded lightly
tamarind paste
salt and sugar to taste
coriander leaves for garnishing
1 lime




  • wash and clean the fish, make slits on the body.

  • brush some tamarind paste on the fish, leave aside for a few minutes

  • meanwhile, prepare the blended ingredients

  • coat the fish with blended ingredients, lemongrass and kaffir leaves. add sugar and salt according to taste. marinade for 20 minutes

  • put the fish in a baking dish. bake in oven for 20 minutes

  • garnish with coriander leaves.

  • squeeze lime juice on top of the fish before serving

creamy chicken sandwich



i made chicken sandwich from the blackpepper roasted chicken leftovers...hubby wants to eat sandwich today...he's bored of porridge already...



2 pieces wholemeal bread

2 tbsp mayonaise

lettuce

tomato slices

chicken pieces

dash of blackpepper


  • spread some mayonaise on the bread

  • tear the chicken into small pieces

  • mix the chicken with mayonaise. add a dash of ground blackpepper

  • arrange the lettuce and tomato slices on top of the bread.

  • spread the chicken mayonaise and cover with another slice of bread

easy chicken porridge


hubby had his gallbladder removed 3 days ago, so now he has to limit his oil and fat intake...he is still not well yet and he requested to eat porridge for the whole week...


1/2 cup rice, rinsed

2 1/2 cup water

1 inch ginger, finely sliced

2 garlic, finely sliced

1 chicken cube

mince chicken

carrots and potatoes, cubed

ground blackpepper

salt to taste


  • boil the rice with water in a small pot

  • add in chicken cube, ginger and garlic

  • when boiled, add in chicken, carrots and potatoes

  • let simmer until the rice and other ingredients soften

  • add in blackpepper and salt to taste

  • remove from heat and serve

easy chicken rice


bought a blackpepper roast chicken @ Tesco and thought that it would be nice if eaten with chicken rice... Spinning



3 cup rice

5 cup water (or according to your rice amount)

1 chicken cube

1 tbsp butter

2 inch ginger } thinly sliced

3 garlic } thinly sliced

1 onion } chopped

pandan leaves

salt to taste


  • wash and rinse the rice

  • heat butter in wok. add in ginger, onion and garlic

  • add in rice, mix well

  • transfer the rice to a rice cooker. add in water, chicken cube and salt

  • cook as usual. when the water dried up, put in the pandan leaves

  • serve with chicken, salad leaves and sliced tomatoes and chicken soup

orange sponge cake


i tried out this recipe from mamafami's fotopages..it tasted very nice but my texture didn't turn out that nice...maybe i did not beat it until light and fluffy....i'll try this recipe again next time....


6 eggs

175g castor sugar

1tsp ovalette

225g superfine flour, sifted

60g corn oil

30ml orange juice

1 tsp orange rind

20ml cold water



  • beat eggs, sugar and ovalette until light and fluffy. add in flour, mix well slowly

  • add in orange juice, rind and water. mix well

  • add in oil, mixing well slowly

  • pour the mixture into a baking pan, pre-lined with a baking paper.

  • bake at 180 degrees for 25-30 min

  • let cool. decorate as you like. ( i pour some chocolate ganache on top)

cinnamon rolls (ii)




i tried out another recipe of cinnamon rolls from Allrecipes.com ...it was nice when they were taken out from the oven but after a while, they were not that soft...but tasted nice...i like the recipe from Kak Lynn that i tried before....very soft until the very next day...


1 packet yeast

3/4 cup warm water

1/4 cup sugar

3/4 tsp salt

1 egg

2 1/2 cup bread flour


1/4 cup butter

1 tbsp ground cinnamon

1/2 cup brown sugar



  • dissolve yeast in warm water. let stand until creamy (about 10 min)

  • combine yeast mixture, sugar, salt, egg and 1 cup of flour. stir well to combine

  • stir in the remaining flour, 1/2 cup at a time, beating well after each addition, continue until it becomes dough.

  • put the dough on a lightly floured surface, knead about 8 min, cover with damp cloth for 10 min

  • lightly grease a square baking pan. roll the dough to 1/4 inch thick. smear the butter and sprinkle the cinnamon and brown sugar. roll and slice

  • arrange in the baking pan, cover and let rise in room temperature for 45 min.

  • bake in a preheated oven 200 degrees for 20 min or until lightly browned

cendol & laksa kedah - the edge of the jungle






i don't know how to correctly name this place but i found it rather interesting...it's only a stall by the roadside but you are actually enjoying its scrumptious laksa and mouthwatering cendol inside the jungle....with tall trees on top and its big roots underneath your tables and stools.... Way Too Happy


it is situated on the way to Bangi Lama town, past the Teras Jernang junction....you won't miss the spot as many cars are seen by the roadside....there are ample of tables and stools inside "the jungle" which is a bit hilly....and it is very cooling under the sheds of trees... Too Funny


they only sell cendol biasa or cendol pulut and laksa Kedah at a very, very reasonable price... Brows


Jihan was so fascinated looking around at the tall tress and really enjoyed herself eating the laksa and cendol there... Rolly 3

we went to celebrate atok's birthday at The Rain, Bangi...they were having a TV shoot there and we got the opportunity to see Lisdawati, Raja Farah and Ezani in action!!!! Bounce the ambience was quite good (in spite of 2/3 of the cafe was used for the shooting purposes)...the food services were quite fast and the choice of menu was ok....the food was alright, none of us tried the steak though which was their in-house specialty....price was reasonable... Sunshine

me and Jihan got to take photo with the handsome Ezani...a nice and humble person.... Happy

my style chicken BBQ marinade


i just chuck everything that was available in the kitchen to make the BBQ chicken...it turned out pretty good...


garlic

ginger

coriander leaves

red chillies

salt and pepper

soy sauce

fish sauce



  • i process all the dry ingredients and mix them with the chicken. add in the salt and pepper, fish sauce and soy sauce according to taste. i left them overnight and the taste really seep through the chicken well.....
  • ready to grill

BBQ outing @ Sri Pena Port Dickson








my cousin booked @ Sri Pena PD for us to stay overnight...and we had a wonderful homemade BBQ chicken, meehoon goreng, sandwiches, brownies, salad and fruits to satisfy our hungry stomach.....!!!

orange mocha brownies




i made this delicious, yummy brownies for a family gathering in PD, topped with chocolate ganache....i tried the recipe from Kak Rinn's fotopages...it tastes very, very good indeed...a perfect combination of chocolate with orange....tastes like the Zip chocolate wafer....


Ingredients:

1 1/2 cups plain flour, sifted

2/3 cups cocoa powder

1 tblspn coffee powder

1 1/2 cups caster sugar

250gm butter, thawed

4 eggs, lightly beaten

1 tblspn vanilla essence

1 orange, juiced abt 1/2 cup and rind grated

1 cup of dark & milk chocolate chips mix (i used choc chips)


Method:

1. In a bowl mix all ingredients except orange juice, orange rind and choc chips. Beat using mixer at med speed until well combined.

2. Chuck in orange juice and rind. Mix again.

3. Stir in choco chips.

4. Pour into baking tray, pre-lined with baking paper overhanging from both sides.

5. Bake for about 25mins @ 170 deg cel.

6. Take out from oven, leave in tin for 5 mins and take out to cool on wire rack.

7. Pour and scrape choc frosting evenly on surface. Cut into squares.


Frosting:

200gm dark choc bar

1/4 cup whip cream

1 tblspn coffee powder


* Combine all in a casserole and microwave for 1 min on HIGH. Take out and stir well until you get a lovely choc frosting. Or just double-boil over medium heat

chilli's





it's post valentine's day, while buying some groceries at Carrefour Midvalley, me and hubby had dinner @ Chilli's....it's our 3rd time here after my sister recommended this place some time ago..cannot go here that often....quite pricey.....i opted for crispy chicken salad (whoaa!! so much greens....) and hubby chose spaghetti chicken....and we finished them all....

waroeng penyet





the next day we went to The Curve/Ikano....brought Jihan to the kids playland and window shopping...and opted to have Indonesian lunch...tried out the dishes at Waroeng Penyet....funny name they have...


we were given a pencil and a menu and we tick whatever we wanted to order...then you have to go to the counter, hand in your order from and pay at the same time...they'll give you a number and you put it on your table...a few minutes later, they'll serve your food...in the meanwhile, you'll be entertained with selections of Indonesian songs (luckily they played Radja, not dangdut)


hubby ordered ayam penyet and es happy soda and i ordered gado-gado and es alpukat...the food, i would say, the taste was rather blunt, no kick (especially my gado-gado)...i've tasted Indonesian food before but they taste great...maybe the wrong choice of food this time...


anyway, my little Jihan was full and satisfied....she ate rice with gado-gado gravy and she loves tempe...!!!

we went to one utama for window shopping and at around 11.45 am, my little Jihan screamed out loud that she was really hungry...so we went to italiannies after a recommendation from a good friend of mine...she warned us about how large the portions are at italiannies...so we only ordered a spaghetti and a seafood pizza...

to our surprise, the portions were really BIG.... luckily, Jihan was very hungry and she ate the spaghetti quite a lot....we also got the complimentary foccacia....by the end of the day, we were so full and packed the leftover foods home....

good food with a good ambience, but it was quite hot that day, maybe something wrong withe the aircond..
