baked fudge brownies last weekend - taken from Periplus Mini Cookbooks (Brownies, Fudges and Toppings)...very easy to make...
150g butter
200g dark cooking chocolate
3/4 cup castor sugar
3 eggs
1 tsp vanilla essence
1 cup flour, sifted
- preheat oven 180 degrees. brush a 8 inch square tin with oil or melted butter and line base with baking paper
- melt butter, chocolate and sugar using double boiler method, stirring occasionally. remove from heat
- beat in eggs and vanilla. then fold in flour. pour into the baking tin and baked for 35 minutes
- remove from oven and cool in tin before cutting into squares
